Isabel Fortin wins Gold Medal at Wessex Salon Culinaire
It was a triumphant day for Lakefield at the Wessex Salon Culinaire – one of the UK’s largest live culinary competitions – as, on 27th May 2015, Anastasia de Menezes bagged Bronze in two contested categories and Isabel Fortin, Lakefield Level 2 Professional Cookery student, emerged with the coveted Gold Medalin the Cold Chocolate Dessert Tasted category after vying against professional patisserie chefs.
The competitors for this category were judged by Matt Owens, executive pastry chef at Zuidam UK, and Alan Shipman, executive development chef at Sodexo. Both praised Isabel’s elegantly artistic creation, which featured a chocolate passion slice with ganache and passion fruit brittle. As a final, unwittingly clairvoyant touch, she added a crinkle of edible gold leaf.[/vc_column_text][/vc_column][/vc_row][vc_row][vc_column width=”1/2″][vc_column_text]
Matt Owens, who admitted that he “didn’t usually like passion fruit”, commended Isabel on her use of the fruit, stating that he had enjoyed it. Isabel said, “It was completely unexpected – the other competitors were very good – although of course I was overjoyed and very proud when I was picked out to receive the Gold award.”
