3kg / 12 cups of blueberries
Finely pared rind and juice of 4 limes
1kg / 5 cups preserving sugar with pectin
Method • Makes about 1.3kg
Step 1: Put the blueberries, lime juice and half the sugar in a large non-metallic bowl. Set aside for 4 hours.
Step 2: Tip the berry mixture into a pan and stir in the finely pared lime rind and the remaining preserving sugar. Heat the mixture slowly, stirring continuously, until sugar has completely dissolved.
Step 3: Increase the heat and bring it to the boil. Boil rapidly for about 4 minutes, or until the jam reaches setting point (105°C/220°F).
Step 4: Remove the pan from the heat and set aside for 5 minutes. Stir the jam gently, the pour into warmed sterilized jars. Seal the jars, then label when completely cold. Store in a cool, dark place.
