Food and Beverage Level 2

DURATION: 1 year full-time

The food and beverage course not only trains you to create recipes, but also prepares you to set up and market a business in this field. Get the necessary knowledge and skills to work in hotels, restaurants, private dining rooms and banqueting events. If you live outside London, the College offers accommodation and the possibility to work for a Catering Company in the meantime you are studying with us.

Once you have successfully completed the Food and Beverage Course Level 2, you could progress to Hospitality Supervisionn and Leadership Course Level 3.


Food and Beverage Course qualifications are aimed at learners interested in hospitality and catering. It is both for new entrants and also for those already working in hospitality and catering.

5 GCSE (A-C grade) however, each application will be considered on individual merit

Prospective students will be employed by Lakefield or another approved Hospitality employer for the duration of the course.

Completion of at least three days trial at Lakefield

  • City and Guilds Diploma Level 2 NVQ Diploma in Food and Beverage Service
  • RSPH Level 2 Health & Safety Certificate
  • RSPH Level 2 Food Safety Certificate
  • WSET Level 1 Award in Wines: All students who pass will be issued with a certificate suitable for framing and a lapel pin.

Morning 8:45am-12:20pm Practical Training Cookery

Afternoon: 1:00-5:30 Theory Classes

Mandatory Units total of 25 Units

  • Working effectively as part of a hospitality team (3 credits)
  • Maintain a safe, hygienic and secure working environment ( 3 credits)
  • Give customers a positive impression of yourself and your organisation. (5 credits)
  • Serve food at the table ( 4 credits)
  • Prepare and clear areas for table service ( 4 credits)
  • Employment rights and responsibilities in the hospitality, leisure, travel and tourism sector ( 2 credits)
  • Maintain food safety when storing, holding and serving food ( 4 credits)
  • Serving Wines (exam  WSET Level 1 Award in Wines)
  • Wine Tasting : Taste and describe wines using the WSET® Systematic Approach to Tasting
  • Food and Wine Matching : A practical guide to the key considerations when matching food and wine successfully
  • Wine Service and Storage : Learn the correct way to store and serve wine and recognise common faults found in wine
  • Social Responsibility : A guide to sensible drinking
  • Types and Styles of Wine : Learn about what makes wines taste different
  • Grape Varieties : Learn about the characteristics and styles of wines produced from the main grape varieties
  • Main white grape varieties : Chardonnay, Sauvignon Blanc, Riesling
  • Main black grape varieties : Cabernet Sauvignon, Merlot, Pinot Noir, Syrah/Shiraz
  • Named Wines : White: Pinot Grigio, Muscadet, Sancerre, Chablis, Sauternes. Red: Claret, Beaujolais, Châteauneuf-du-Pape, Rioja, Chianti

Plus Optional Units

  • Prepare and serve wines (5 credits)
  • Provide a silver service (6 credits)
  • Prepare and clear areas for counter and takeaway service (3 credits)

Immediate employment working as front of house, silver service

  • One to one coaching with Professional Mentor
  • CPD sessions- Continual Professional Development
  • Visiting hotels and Restaurants, Contract Caterers to gain insight
  • Teamwork, developing positive working relationships with others
  • Opportunity to enter national competitions in your field of work
  • Placement opportunities with famous chefs
  • On-line learning and testing programme

Selected students have the possibility of getting extra income by working for Netherhall’s Catering. These hours will be paid at the National Minimum Wage for the age group of the students.
