Our students got up at the crack of dawn because fish markets are open from 4am to just 8am, but despite the early rise, they were ready and very excited for their seminar in Billingsgate Seafood School, located above Billingsgate Market in London’s Docklands.

Like every year, Lakefield students participated in a challenging day of seafood preparation and cooking at the Billingsgate Seafood Training School. We were given a warm welcome by Billingsgate’s training team and we had a short health and safety talk and an introduction to the workings of Billingsgate Market.

During the training day, the students learned about fish preparation and were guided through preparation of chosen species of fish (there are a wide variety to choose from), including gutting and filleting.

When our Lakefield group was ready, the challenge started! Divided in teams, they had to cook and plate different varieties of fish, using different cooking techniques.  After this session, they were ready to give training sessions in schools in the UK, teaching young people how to cook and serve fish.I am text block. One of the main aims of the Billingsgate Seafood School is to encourage young people and those wanting to change career to consider the Seafood Industry. Since the School was established in 2000 they have focused on developing schools programmes to promote seafood, as well as benchmarking industry-wide training. Lakefield is part of this training programme and at the same time, this programme is part of our overview personal development of each of our students. With this type of activities, we encourage them to develop new skills such as the capacity for teamworking, learning how to deal with teams, and teaching and transmitting their knowledge to others.
