Lakefield has recently gone into partnership with The Laurels School from the leafy residential area of Clapham Park. The Laurels is an independent day school which opened in September 2013. At a time when healthy balance diets are important to the development of young people, they have limited space and facilities to teach Food Preparation and Nutrition. They went in search of specialised teachers in this field and through personal recommendation, discovered Lakefield.

We are always happy to support young people as they moved towards their career paths in life. The first lesson took place on the 7th of October 2016 with a group of Y8 Girls from 12-13 years old.

The girls made a three course meal in 3 hours.

Two of our chefs demonstrated and worked along side the students enthusing them to work with a range of ingredients that they weren’t familiar with. The skills incorporated into the lesson were many, varying from caramelising walnuts to pickling beetroots, making vinaigrette and dressing horseradish-crusted salmon. They also cooked up a delicious chocolate mousse from scratch using The Finest Belgian Callebaut Chocolate .

Our Executive head chef, Doris Morales commented that they were a pleasure to work with. Their teamwork skills are excellent and their attitude to learning was exceptional. All the girls focused on the task and were very willing to try new things.

They sat down to eat what they’d made together appreciating the importance of eating as a social event and developing the skills of table etiquette.

Miss Melanie Clark, the deputy head of The Laurels said “the girls have enjoyed the day so much, Lakefield has gone above and beyond what we’d expected”. We look forward to the next session.
